CHOCOLATE CHERRY BROWNIES

Packed with protein and full of chocolatey deliciousness.

You’ll need:

125g tinned black beans, drained and rinsed
2 large eggs
20g cocoa powder
90g porridge oats
1 ½ tsp baking powder
50g prunes
30g soft dates
150g ripe banana (peeled weight)
3 tbsp maple syrup
125ml chocolate Pro Mlk
150g cherries, stoned
1 tbsp cacao nibs (optional)

 

 

 

What to do:

Step 1

Pre-heat the oven to 180C and line a 25x25cm loose-bottomed cake tin with parchment.

Step 3

Roughly chop half the cherries and stir them into the mixture then spoon into the prepared tin. Halve the remaining cherries and scatter them, and the cacao nibs if using, over the top of the brownie.

Step 5

Bake for 20 minutes then allow to cool before slicing and serving.

Step 2

Put all the ingredients except the cherries and cacao nibs into a blender or food processor and whizz until smooth.
